States. There used to be a Corky’s outside of Destin, Fl, on the way to Panama City Beach if you were headed east. When I first graduated from college, I lived in Ft. Walton Beach. That first year there, I spent 4 weekends in a row travelling to Panama City beach to party with the spring breakers! That kind of fun works up a powerful appetite and one weekend my buddy and I stopped off at Corky’s on our way home to indulge in an “all you can eat” promotion. A few hours later we waddled out of that restaurant with the meat sweats, but we damn sure got our money’s worth! That location is no longer open and I sometimes wonder if I was partly responsible for forcing them out of business.
Fast forward over a decade later, I had a buddy go to Memphis on a work trip and he was kind enough to bring back a souvenir, [easyazon_link identifier=”B000F1Z66W” locale=”US” tag=”backyardmov05-20″]a jar of Corky’s BBQ rub[/easyazon_link], the memories instantly came flooding back. I recently used the rub on a rack of baby back ribs and I was reminded why Corky’s has been a mostly successful chain.
The rub is paprika heavy and has a nice balanced flavor. I used the rub on the ribs I was making for kids, it isn’t salty, it isn’t sweet, it isn’t spicy, but it is full of flavor! The rub is fairly fine and kept clumping up in our humid weather, but by using mustard as a base, I was able to spread it nicely on the ribs. The rub has a very fine consistency, so the surface of the ribs aren’t gritty and the paprika results in a lovely mahogany color on the ribs.
While I don’t think you would win any competitions with this rub, there is a reason Corky’s has been around for three decades, this rub will be pleasing to a broad audience.
