Bottom Line: Chiavetta’s is a variation of your standard Italian Dressing marinade, fortunately your standard Italian Dressing marinade goes with just about everything.
I recently participated in a BBQ sauce exchange through the mail and a bottle [easyazon_link identifier=”B001UKBDGY” locale=”US” tag=”backyardmov05-20″]Chiavetta’s Barbeque Marinade[/easyazon_link] came in my package. Chiavetta’s is a catering business out of Buffalo, New York, apparently world famous for their marinade.
I used about half a bottle on about 3lbs of chicken wings that I thawed in the marinade overnight. The marinade has a very pleasant smell, that from the get-go reminded me of Italian dressing, very heavy on the vinegar. It has a thin consistency and to look at it, it looks like a Greek variation of Italian dressing.
I cooked the chicken wings on the Kamado and while tasty, there wasn’t a real discernible taste from the marinade. I could taste the marinade slightly, but it wasn’t pronounced, and it definitely didn’t overpower the flavor of the chicken. With the remainder of the bottle I will marinade another meat to see if the flavor takes better and will update this review accordingly.
Final Verdict: 3/5 if you like Italian Dressing as a marinade.
